Kai's 2nd Birthday
Today is my baby boy Kai's 2nd birthday, which is a very special celebration because we were unable to be with him on his 1st birthday. As I watched this video of when we first met the boys while holding them tightly on my lap, I couldn't help but cry with an overwhelming feeling of joy.
This video is of our first visit to meet the boys. It was a bittersweet meeting because we had to leave them in Ethiopia after falling in love with them. I am thankful we didn't know it was going to take 6 months of waiting to be able to bring them into the U.S... the wait would have killed me. We took one week at a time, hoping that this was the day we were going to fly to bring them home. Finally on the day before Thanksgiving, we brought them into our home and the journey began!
2 large onions, chopped fine
1 clove garlic, minced
1/2 cup butter or coconut oil
4 TBS Organic Ethiopian Berebere
2 tsp Celtic sea salt
1 whole chicken, separated into legs, breasts, thighs
8 organic hard boiled eggs
Chop the onions and place into a crockpot with the garlic and butter/oil, Berebere and salt. Turn on low and let sit over night or until the onions caramelize. In the morning (or after 8 hours), place the chicken into the crockpot (I love THIS crockpot as it has a delay timer so I can make sure it done when I get home:)) and let it cook for another 8 hours or until the chicken is done and very tender. Meanwhile, cook the hard boiled eggs. Place the chicken/onion mixture onto a beautiful dish and mix in the hard boiled eggs. SOOOOO good and easy! Makes 8 servings.

Sometimes I still get teary-eyed, fifteen years after we brought our son home from an orphanage in Ukraine, to talk about his adoption without tearing up. We met him when he was almost six and ended up having to wait four long years while the Ukrainian government revamped its adoption process before we could bring him home. I never thought it would be possible to wait a long time without giving up or going crazy, but as you say, you do it a day at a time when you have no other choice. We had two other children (from Korea) at home to take care of during the wait, so that helped. I know you feel blessed to have your precious boys, but they are also blessed to find parents who will give them love and good health.

your DORO WATT recipe sounds SOOOO good, I order the "Berebere" from amazon.
Is the berebere spicy??? and if it is how can i fix it a little bit.
Thanks Norma! We are planning a book in the "The Art of Healthy Eating" series for Holidays and plan to put a lot of personal stories in it. I don't think berebere (especially using the mix I link to) is too hot. It was a great flavor and isn't really that spicy at all. :)

DeleteNot sure if i'm doing something wrong, but i put in your discount code on the swerve website and it's not giving me 15% off ... it's only barely giving 9%...if it's supposed to be 9% i can be happy with that...but if you're getting any affiliate moneys or they told you 15% and are just not giving it...that could be a problem. Just thought I'd let you know in case any of your other fans are having issues as well.
