Cancer Facts, Pumpkin Sorbet and GIVEAWAY!

Why are the rates of cancer going up? In 1840 the average American consumed 2 tsp of sugar a day...in 2011, a typical American consumes over 63 tsp of sugar PER DAY! Cancer LOVES glucose! This is why we test cancer patients by having them drink a “glucose” mix and watch where the cancer attacks. So you think, “Sure, just cut out the glucose from our diet.” BUT most people don’t understand where all the glucose is coming from. It isn’t just the sugar. “Complex carbohydrates” are structurally just glucose molecules hooked together in long chains. The digestive track breaks it down into glucose. So a sugary and a starchy diet are pretty much the same thing. So in essence a bowl of oatmeal, skim milk and a banana is just a huge bowl of sugar. We all know that sugar is bad, but we mistakenly believe complex carbohydrates are healthy and we need to eat them in abundance.

Whole wheat bread is high in sugar, higher than some candy bars and sugary sodas, and some scientists have proven that two slices of whole wheat bread will raise your blood sugar levels as high as if you were eating a candy bar.

According to the Life Extension article, eating two slices of whole wheat bread is worse than drinking a can of Coke or eating a candy bar. In 1981, the University of Toronto found that the Glycemic Index of white bread is 69 and whole-grain bread is 72. Wheat cereal is 67, but table sugar is only 52. That means the Glycemic Index of whole grain bread is higher than that of table sugar, which is also known as sucrose. For you “gluten free” readers out there...rice cakes are listed on the Glycemic Index at 77! This is why when people go “gluten free” and grab a lot of packaged “gluten free” items at the store, they gain weight rather than lose weight. And I'm not even really concerned about the weight issue here, I am concerned about high insulin levels causing cancer and heart disease as the video describes.

All starchy foods, like sweet potatoes, quinoa, brown rice, and sweet foods, like fruits, raise blood sugar . When digested they are immediately absorbed into the bloodstream, causing an increase in the hormone insulin. Insulin clears sugar and fat from the blood and to be stored in the tissues for future use. No matter where the carbohydrates come from; 4 grams of carbohydrates equal one teaspoon of sugar in our body. Let me say that again…4 grams of carbohydrates equal 1 teaspoon of sugar in our body. So with that thought, a small Blizzard has 530 calories and 83 grams of carbohydrates; which equals 21 teaspoons of sugar. A 9 ounce bag of potato chips becomes 22 teaspoons of sugar! For about 5 years now, German doctors have been testing cancer patients in a clinical study of a surprising prescription...fat. Their patients are on a ketogenic diet, which eliminates almost all carbohydrates and sugar, and provides energy only from high-quality fats.

You are thinking...”this sounds completely opposite of the ‘raw food’ juicing cancer diets, I have been reading about!” BUT this scientific evidence dates back more than 80 years. In 1924, Nobel Prize winner Otto Warburg published his observations of a common feature he saw in fast-growing tumors: unlike healthy cells that can get energy by metabolizing sugar in the mitochondria, cancer cells appeared to fuel themselves only through glycolysis, a less-efficient means of creating energy through the fermentation of sugar in the cytoplasm. Warburg believed that this metabolic switch was the primary cause of cancer, a theory that he was unable to prove before his death.

If most aggressive cancers rely on the fermentation of sugar for growing and dividing, then take away the sugar and the cancer can stop spreading. Meanwhile, normal body and brain cells switch to generate energy from fatty molecules called ketones, the body’s main source of energy on a fat-rich diet with lots of coconut oil which naturally produces ketones.

Sugar is toxic for so many reasons, which is why we shouldn't let our kids eat whatever they want. So my goal is to make lots of recipes your kids would enjoy too!


I often get questions about the cost of the ingredients I recommend, such as Swerve or Just Like Brown Sugar. I calculated the price for my ice cream recipe with all the top notch ingredients. The results:

My recipe = $2.13 per pint.
Ben and Jerry's = about $4.00 per pint.
Cold Stone Creamery = $7.50 a pint and it has 2 GRAMS of trans-fat!


"HEALTHIFIED" PUMPKIN SORBET
2 1/4 cups unsweetened almond milk or 1 can coconut milk
1/2 cup Swerve or Just Like Brown Sugar (to keep it soft)
1/2 cup unsweetened pumpkin puree
2 tsp pure vanilla extract
1/2 tsp pumpkin pie spice
1 tsp Celtic sea salt (to keep it soft)

In a large bowl, combine all the ingredients and mix until well combined. Place into your ice cream machine (click HERE to find the one I love AND it is 1/2 off the original price!!!) and watch the magic happen within 45 minutes or according to your ice cream maker's directions. Freeze until set. Makes 5 servings.

NUTRITIONAL COMPARISON (per 1/2 cup serving)
Traditional Pumpkin Sorbet = 354 calories, 23g fat, 2g protein, 39.3g carbs, 3.5g fiber (35.8 effective carbs)
"Healthified" Sorbet using almond milk = 26 calories, 1.4g fat, 1g protein, 2.9g carbs, 1.2g fiber (1.7g effective carbs)
"Healthified" Sorbet using coconut milk = 148 calories, 14g fat, 1.5g protein, 6.2g carbs, 1g fiber (5.2g effective carbs)

  1. Thanks for the GREAT recipe. My husband is battling cancer and we are living proof that staying off sugar, living gluten-free is working. We always get the same comments on how expensive how we eat is. But it really isn't when you calculate it out. Would love to see a healthy chocolate chip recipe. This has been the hardest to find a good alternative. Many recipe trys but so far none that have really worked (My hubbie LOVES choc chip cookies). But maybe we will win the chocobars!

  8. The best recipe I love is 'The BEST chocolate chip cookie ever' and it is the BEST. It has crunch and chewiness and the perfect taste. They are almost addictive, but in a good way!!

My other favorite when I am craving something sweet "right now" I make the No-Bake Chocolate Coconut Energy Bars. They are so filling and satisfy that sweet craving.

  27. I'd have to say that my brtohers two favorites are the cinnamon rolls and the pancakes with your syrup.
    I say my brother because he's my reason I bake. He changed my life. When he was 3 he was diagnosed as insulin dependent and we had many struggles with his insulin levels. We saw how some "healthy-claimed" foods spiked his insulin levels very high. Instead now, I bake for him what I can and what he craves. he love your recipes and always begs for more! I love that!     I am a 13 yr ovarian cancer survivor / 10 yr melanoma survivor and SO SO concerned about cancer returning. I have been on a low carb/low-no sugar diet for about 2 yrs now, with an occasional slip up.

Saved me because I could use them to make sandwiches or just eat them up with some healthy cream cheese! My daughters, both adopted from China, love your sorbets.   44. I have to say that the "healthified" cinnamon rolls are the family's favorite, but my littlest one is working on his two year molars right now and is loving the "healthified" oatmeal. We made the tortillas last night and had an amazing dinner! I was able to pick the kids up after work, shred,spice and heat up leftover roast aaaannd make healthy homemade torillas and still have time for homework, baths and story time! You have given my family so much already, but I would love, love to make your Best Cookies ever recipe - just need the chocoperfection bars!

  48. It is hard to pick just one recipe since I have made so many of them to date and they are all so delicious. But, I will say the one I definitely make the most is your protein waffles with coconut flour. There is ALWAYS a huge bag in our freezer ready to heat up and eat.

  49. Hello Maria!! My favorite recipe is the Gold Fish crakers. My grandbaby, Cara, was hooked on those things. She is a bit overweight and I wanted to help her with a better choice. It was hard to look into that precious little face and say,"no baby sister....you cant have those!!" Now we can say, "YES, baby sister, you can!!!" I hope to order the cook book for kids from you as she and her brother need this vital way of eating.

Thank you for giving us an option to feed our kids better snacks. I only wish we could get this idea into schools, as our children are at the mercy of the lowest bidder for food to the school system. LORD help those children that are diabetic or borderline for they will get no help in the school lunch line!!

  60. I agree with you on the increase of sugar in the american diet, but im curious for more info on what you say about starches. How do you accommodate the high intake of rice and soy products in Asian diets, (pre the arrival of Burger King) and the low intake of meat products but the shockingly low occurrences of cancer and heart disease in those countries? And in 1840, they consumed a lot of starches, corn, potatoes, beans, wheat. In poorer communities, starches would get you through the winter.

    1. I don't like Whey Low. Ingredients are Sucrose, fructose, lactose monohydrate." These are all sugars.

      Glycemic load is complicated. If you eat the carrots with some butter, you lower the load too, but that just slows how fast the sugar gets into your blood stream. You won't be able to maintain a Ketogenic state necessary to help starve the cancer cells.

  73. Maria my favorite recipes of yours so far is your Breakfast in a coffee mug. I have used it as a pancake and added syrup to it by cooking it in a glass bowl instead of a mug. I have used it with cream cheese and some butter on it. I have eaten it with strawberry jelly and cream cheese. MANY MANY ways to play around with it. I even want to try it with milk poured into the bowl of it. I make at least 5 of them at a time and store them in the fridge until I want them for a snack or breakfast. I have also heated one up for like a minute and put chocolate on it with some butter and yum that is good to.

    I am making the sorbet recipe right now. Just got it in my email and had to try it. It's turned back hot again here so I thought what a perfect time for sorbet!

  84. So far everything I have made has been delicious!! I really love the protein popovers (I make them sweet with the vanilla protein powder)...It' always hard to just eat one or two! My boyfriend looves the blueberry morning cereal. He ate all of it the first time I made it, so now I always double the recipe. It's great to snack on and of course great with almond milk! I love your blog...you have inspired me in so many ways. I am happier, healthier, and have a new love for cooking. Thanks for sharing all your knowledge and yummy recipes! :)

I made it the first time for my birthday cake. It was gone in two days. I didn't eat it all, I promise! I have since made it for potlucks at church. No one can tell its good for them!     My name is Alana Corwin and first let me just say that I thoroughly enjoy reading your blog. Your recipes look and sound so delicious and I can't wait to try more of them. Unfortunately being a 22 year old college student has made eating healthy rather difficult but I do the best I can. So far I have tried your eggplant French toast (which was marvelous) and eggs in a frame eggplant dish which I also loved. At some point I would like to acquire all the ingredients that you suggest but that will take a little while. These chocolate bars sound like an amazing addition and I was so happy to see that they were lactose free! I have recently discovered that I allergic to lactose and finding lactose free chocolate has been quite an adventure. Look forward to reading more!

  94. I love your cinnamon roll recipe made with psyllium husk powder! I topped them with your xylitol caramel sauce and it was just as good as the real thing! I will be making your clam chowder in a bread bowl soon! Thank you for all your recipes... it makes going grain/sugar free a little more bearable! I have lost 90 pounds in the last year and you make my life a lot sweeter by allowing me some tasty treats :)

  104. There are so many that I've tried and I must say, I've never been disappointed with any so far. But the one I love the most and make every week, sometimes twice a week is the baby cornbread. I live in Louisiana and cornbread just goes with everything! lol! I even crumble on top of my salads instead of croutons. I love it! Thankyou so much for everything you do!   108. My favorite healthified recipe is the pigs in a blanket!! I love SO many it's really hard to say which one I love best but TODAY it's pigs in a blanket. With only a few ingredients, these are so quick and easy to make!! The best part is they fast exactly like regular pigs in a blanket but the dough is made with no bad flour and protein. You can also freeze your leftovers and reheat anytime you want a snack!! ABSOLUTELY AWESOME :-)

  109. So far my fave is the cinnamon rolls. I made them with coconut flour I got at my local market. I finally have some Honeyville blanched almond flour on the way and will be making so much more as soon as it arrives. I am pretty sure the waffles will the biggest hit in my house, but I am waiting until I get my Jay Robb protein since I have tried it with other brands and I don't like the taste of the other brands of whey protein. Jay Robb is unbeatable. Thank you for another opportunity to win some yummy chocolates!

  110. I have just been learning about all these chemicals and food dyes in the past 3 months. My aunt told me about Wheat Belly which lead me to you and I purchased your healthy kids cookbook. I have a 4 and a 7 year old and it has been a lot of fun trying all this new stuff. We have tried about 5 of your recipes now and so far my favorite has been the CHICKEN NUGGETS. My son loved them and I couldn't stop eatting them. I am loving making foods for his lunches that I know will get him through the day and wont' hurt him. Thank you sooo very much.     1. When you mentioned this I redid the calculations and found out that the program I use had the wrong value for coconut milk (I think it was more of a coconut cream). I redid them by hand and updated them above. Thanks!

  122. I love your tortilla/wraps. I had experimented on my own with horrendous results. The addition of the psyllium husks made all the difference! These have been the most versatile recipe for me. BUT...I also love your coconut waffles, mocha fudge cake, pumpkin mini-muffins.....you get the idea. I love your recipes!!

  130. Your recipes really got us through our gluten free/grain free journey. Since all my kids have different tastes, one recipe is impossible to pick.

    My oldest son loves your cinnamon bun recipe, my daughter cannot get enough of the PB&J truffles, my youngest son tends to love everything (benefit of eating grain free earlier in life).

    As for me, I love the protein waffles, chocolate chip cookie dough, extreme chocolate birthday cake, eggplant fries, avocado pudding and seafood alfredo. Plus many, many more.

  132. My s-i-l is a naturopath who started us on low carb a couple of years ago; we've certainly had our problems with compliance, we do ok for a while and then we slowly slide off. I think if I'd been raised this way it would have been a lot easier. Sometimes I want to quit, but I know that this all makes sense. I just found your blog and appreciate the reminder about all of this. We'll start heading back to greater compliance and health. Thanks.

  158. I'd have to say the recipe that stands out the most to me is the first of yours I ever tried, your deep dish pizza. I tried it shortly after I found out I had to go gluten free 6 months ago. It was something I went into with trepidation, but when the recipe turned out, and me and my husband and 4 year old all liked it, I knew everything was going to be ok. :)

  180. I am new to this low carb thing so have not made any of your recipes yet, but made a similar protein bread today. I am anxious to try yours with protein powder - the one I made is pretty crumbly. Chocolate is always appreciated...hope I'm not too late to enter the contest.

Is the CHAI Donuts...I have been doing low carb for 4 years and have lost 80 lbs, and every once in awhile I would have a weak moment that would cause me to binge on baked goods for a weekend and gain 10-12 lbs that would take 2 months to get rid of. I just found your blog and when starting to have cravings for baked goods I made these and they crushed that craving! I cant wait to get your cookbook, right now I am getting together some of the ingredients I see on a lot of the recipies, I will have to order some of the stuff online because my local health food stors dont have it, but while searching today I found the sweet perfection bars, they were pricey at $4 a bar but I got a dark almond bar and it was great! I hope I win one of the Boxes because $4 a bar will keep me from being able to get them very often. Thanks Maria! you may have kept me from my annual holiday desert meltdown.

I made this Pumpkin sorbet, except I used your vanilla ice cream recipe (with eggs and heavy cream) so I guess it wasn't so much of a sorbet anymore. :) This made excellent pumpkin pie ice cream, and I can't believe how creamy this was. I used to make ice cream all the time and remember many failed attempts at making "healthy" ice cream using lighter milks. Now I'm not so afraid of fat anymore. One question though, I used the last of my JLS and was going to order more, but thinking about buying Swerve now.. it comes out just as creamy and soft?
