
No wonder Hostess Twinkies can sit in a pantry for years and never mold!
Hostess Twinkies Ingredients: Enriched Bleached Wheat Flour [Flour, Reduced Iron, B Vitamins (Niacin, Thiamine Mononitrate (B1)Riboflavin (B2)Folic Acid)Corn Syrup, Sugar, High Fructose Corn Syrup, Water, Partially Hydrogenated Vegetable and/or Animal Shortening (Soybean, Cottonseed and/or Canola Oil, Beef Fat)Whole Eggs, Dextrose. contains 2% or Less of: Modified Corn Starch, Glucose, Leavenings (Sodium Acid Pyrophosphate, Baking Soda, Monocalcium Phosphate)Sweet Dairy Whey, Soy Protein Isolate, Calcium and Sodium Caseinate, Salt, Mono and Diglycerides, Polysorbate 60, Soy Lecithin, Soy Flour, Cornstarch, Cellulose Gum, Sodium Stearoyl Lactylate, Natural and Artificial Flavors, Sorbic Acid (to Retain Freshness)Yellow 5, Red 40.
The Twinkie was created during the Depression and contains 39 ingredients! One of those ingredients is a preservative, sorbic acid. Sorbic acid actually comes from natural gas. AND...5 ingredients come from rocks.
If that isn’t gross enough, ingredients like cellulose gum, Polysorbate 60, and calcium sulfate are also used in sheet rock, shampoo, and rocket fuel. Oh, and...what make these treats so "light and fluffy?" It is limestone! And the creamy filling? What is that? It's not cream, it is partially hydrogenated vegetable oil...TRANS-FAT. So instead of pumping our kids with junk that NEVER gets moldy, try this adaptation instead.
2 cups peanut flour
1/2 cup Just Like Sugar (or erythritol)
1 tsp stevia glycerite
3 1/2 tsp aluminum free baking powder
1 tsp Celtic sea salt
1/8 tsp baking soda
1 1/4 cups vanilla or chocolate almond milk
1 tsp vanilla
3 extra large eggs (or 4 medium eggs)
OPTIONAL for Chocolate Twinkie: 1/4 cup cocoa powder
FILLING:
1 cup heavy cream OR coconut cream (if diary allergy)
1/4 cup cocoa powder
1/4 cup Just Like Sugar (or Swerve)
Preheat oven to 350 degrees. Grease Twinkie pans with coconut oil or butter. Combine all ingredients in a large mixing bowl. Mix at low speed for 30 seconds while scraping bowl. Mix at high speed for 3 minutes, scraping bowl every minute.
Spoon batter into tin until they are 2/3 full (click HERE to find a Twinkie pan on amazon.com). Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes in pans then move to wire rack to cool completely.
Chocolate Filling: Whip the cream until fluffy, add in the cocoa powder and sweetener. Fill the Twinkies with chocolate whipped cream using the piping tool. Makes 12 servings.
NUTRITIONAL COMPARISON (per serving)
Hostess Twinkies = 150 calories, 5g fat, 1g protein, 25 carbs, 0 fiber
"Healthified" Twinkie = 113 calories, 7g fat, 8g protein, 6 carbs, 3g fiber
wow, my older son was really happy to see this recipe; he is 14 and just read Wheat Belly. he went off wheat and most other grains about 2 weeks ago. i think he has lost a couple of pounds and definitely does not snack constantly like he was before. question, do you think almond flour would work in this?

ReplyDeleteIf you use Truvia instead of agave, I would use the same amount. Agave and Truvia are both a little sweeter than sugar so it should work out to be the same.

Hi Maria! I just LOVE all your recipes and I think you are so inspiring! Quick question...what would be a good substitute for the peanut flour? Hazelnut? Or would you suggest just making my own flour by grinding raw peanuts? Any feedback would be greatly appreciated!!!!

The kids were so excited about getting twinkies, but I failed at my attempt. :( I used the exact same ingredients except I didn't have stevia glycerite. I asked on the forum and learned the 1 tsp of the glycerite was equal to one cup sugar. So I used NuNaturals stevia extract. They stated that 3/4 tsp is a sweet as 1 cup of sugar. I always liked NuNaturals becaue it wasn't bitter. Well I guess I used too much because they were SO bitter. And I oiled the twinkie pan very well, but they stuck and broke apart. The ingredients are so expensive that I hate when I fail. Next time I will only make recipes if I have the exact same ingredients. I LOVE your wonderful website and the valuable info and recipes. I just wish I didn't disappoint a bunch of kids because I never seem to get sweetener substitutions right! I see the recipe in the new book is entirely different, so maybe someday I will try that one.

I just made two batches of these....one with the cocoa powder to have chocolate and one with no cocoa powder. I also tried both sugars. One with erythritol and one with the just like sugar and no erythritol. I baked mine for 20 minutes each. They came out of the pan beautifully and were so easy to make. I am not familiar with the NuNaturals, but the recipe works perfectly if using the ingredients listed. Hope that helps ;)
