White Chocolate Macadamia Biscotti

1/3 cup coconut oil or butter, softened
1/2 cup Swerve (or equivalant)
2 eggs
1 tsp vanilla extract
2 cups almond flour
2 tsp baking powder
1/2 cup La Nouba white chocolate, chopped
1/4 cup chopped macadamia nuts
1 egg yolk, beaten
1 TBS water

Preheat oven to 375 degrees F (190 degrees C). Grease baking sheets, or line with parchment paper. In a large bowl, cream together the butter and sweetener until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the almond flour and baking powder; stir into the creamed mixture until well blended. Dough will be stiff, so mix in the last bit by hand. Mix in the white chocolate pieces and macadamia nuts. Divide dough into two equal parts. Shape into 9x2x1 inch loaves. Place onto baking sheet 4 inches apart. Brush with mixture of water and yolk.

Bake for 20 to 25 minutes in the preheated oven, or until firm. Cool on baking sheet for 30 minutes. Using a serrated knife, slice the loaves diagonally into 1 inch slices. Return the slices to the baking sheet, placing them on their sides. Bake for 10 to 15 minutes on each side, or until dry. Cool completely and store in an airtight container. Serves 30


NUTRITIONAL COMPARISON:
Using white flour and sugar = 71 calories, 10.7 carbs, 0.5 fiber
Using Almond flour and Swerve = 59 calories, 3.1 carbs, 1.4 fiber

  3. I've seen La Nouba products at my local market. They even have sugar free marshmallows which=h would be a nice addition the your recipes of s/f hot coco. Just wondering your thoughts on Maltitol. Does it impact blood sugar? Do you approve of some of their other products?

  4. Malitol does impact blood sugar, but in a tiny amount compared to sugar. I would just keep that as a treat:)

  8. I am so sensitive to maltitol and any sugar alcohol, except erythritol. Then I tried Truvia and stomach upset as well. No idea why as I can have erythritol and Stevia on their own without problems. It's sad.

    Love Biscotti - I need to make some one of these days soon!

  9. Just made these this weekend with the following changes -- no white chocolate, used almonds instead of macadamia nuts (more of them). They are TO DIE FOR! I love biscotti and have really missed them while trying to keep carb counts low. These are a wonderful treat!

    Thanks so much for all of your posts. I rarely buy cookbooks, but I will be buying at least one of yours to show support!

    I have these biscotti in the oven right now with a twist: rather than using white chocolate/macadamias, I subbed a handful of pistachios and some craisins (which I know raises the carbs, but it's Christmas). One of my favorite Christmas cookies was a "Christmas Cantuccini" recipe I've used for years and was going to sorely miss it - but I do think your recipe is going to more than fill the void.
