2 cups ground flax seeds
1/4 cup coconut flour
1 TBS baking powder
6 eggs (separated)
1/3 cup macadamia nut oil (or butter)
One tsp Celtic sea salt
Added mixed dried herbs (Caraway seed, optional)
1 tsp stevia glycerite
Place the egg whites in a mixing bowl and whip until stiff peaks form. Add the yolks and oil. Place the flax and coconut flour in another bowl and add baking powder, salt and herbs and mix. Add the wet mix to the dry mix and mix thoroughly. Place the mix into a non stick bread tin and bake 375 degrees for 55 minutes. Let completely cool before cutting. Serves 16.

Is that carb count net carbs, or total carbs? 4 carbs is a bit much for a slice, but .5 is awesome!

ReplyDeleteMade this today... it was delicious! However mine didn't rise AT ALL... so it was a very small (short) loaf. And was kinda too sweet... stevia glycerite, is that regular stevia?
ReplyDeleteStevia glycerite is different. One tip is to look for “stevia glycerite;” which has no bitter aftertaste as compared to plain “stevia.

DeleteMaria this was fantastic! Mine didnt rise but I loved it.. with avocado, goats cheese, cranberries and walnuts! I followed your recipe exact, used coconut oil instead and I watched your video on making bread - I have guar/xantham gum but the mixture was so thick I was scared to use it! Is it because I didnt use a loaf tin? I only have an open tin which food tends to stick to (I need to go shopping).
