Fried "Apples"

This tastes great by itself, on top of a "healthified" ice cream, "healthified" protein waffles or on top of a pork loin!

"HEALTHIFIED" FRIED "APPLES"
1 zucchini or jicama
2 TBS coconut oil OR butter
3 TBS Swerve OR Just Like Brown Sugar
1 TBS lemon or lime juice
2 tsp vanilla
1 tsp cinnamon

Peel the jicama or zucchini, cut lengthwise into quarters (if using zucchini remove the seeds). Slice into "apple" slices or cubes.

Fried "Apples" on Protein Waffles

Heat the butter over high heat in a medium skillet. When the butter has melted and has turned brown (not black). Stir in all the ingredients and cook on medium heat until the veggie is to desired consistency (the longer you cook it the softer it will be). Adjust the sweetener and cinnamon, if needed. Makes 4 servings.

Traditional Fried Apples = 111 calories, 5.9g fat, 0.2g protein, 14 carbs, 1 fiber
"Healthified" Fried Zucchini = 67 calories, 5.9g fat, 0.7g protein, 2.7 carbs, 1 fiber
"Healthified" Fried Jicama = 71 calories, 5.9g fat, 0.3g protein, 3.7g carbs, 1.8g fiber

    1. Yes, you could use 3 TBS erythriol and a couple drops of stevia glycerite. :)

  3. Could you do this with the chayotes? Wasn't a jicama fan hmm and like zucchini but not sure how that would taste in an apple kind of way lol

    2. Yes, you can! My husband is allergic to apples and most other core/pit fruits. We use a similar recipe with chayotes to make "apples." :)

    I am in LOVE! I am making this for the second time today, so glad I bought 2 jicama. I was wondering if you could cook this in the crock pot and let it soften a little and be more of an apple sauce? Or, what about baking it with a crisp on top? Thanks for your hard work.

    2. I have made the zucchini as an apple sauce, and love it. I am going to try the jicama with the crisp topping. I am also going to try it with your pop tart dough on top as a cobbler topping. I made my boys the pop tarts last week and they LOVED them. That dough recipe is amazing I have been using it to make cookies. Love your books, I have two so far and just can not get enough, the info and recipes are wonderful. I was practically giving a nutrition lecture about you in the isles of Whole Foods the other day, about 10 people immediately put your name and blog site into their phones. Great job! You inspire me to think out side the box with everything that I make.
